Sauced Ribs

So I had some ribs over at a friends place last night that were quite good. I’m not normally a sauced ribs fan… A love for dry rub ribs usually occupies to much of my heart to leave any room for sauced ribs! However, I may have to clear a small space in there for these sauced ribs.

Due to the typical Tyler style of cooking and knowing that I will always be modifying this recipe (along with every other “recipe” I try) I should put a disclaimer in here about following the portions… I payed more attention to the ingredients then I did to the measurements…. and I didn’t write it down… And we all know about the typical Acorn memory…  so modify with impudence!

Rib Sauce (all measurements seemed for a baby back size rack of ribs)

Veggie Burritoes

So here’s a good recipe for some quick and easy Veggie Burritos that a friend made recently.

Food:

Vegetables (I use Onions, Green Peppers, mushrooms, and sometimes random peppers)
Olive Oil
Garlic Salt
Italian Seasoning
Cheese (I use Feta, my friend likes Mozzarella)
Optional: Tofu (I just tried it with tofu and it’s a good addition.
Tortillas

Directions:

1. Cut up the Vegetables
2. Place in plastic bag and add a dash of oil, and your seasonings (plastic grocery sacks work amazingly) and shake up
3. Turn oven on Broil, Line baking pan with Tin foil and cook vegetables until slightly starting to brown
4. Place Vegetables and cheese in Tortillas then either fry in a pan or bake in the oven.

A Yummy Snack

I was tired of studying today so I made myself a nice little snack. Flat bread and Hummus. I thought I would share the recipe with you all just in case anyone was interested.

Hummus

I just found a recipe HERE. It is pretty good, I like to add more garlic and cummin though. Mike’s wife make a mean hummus as well. Oh, if you don’t have lemon juice you can use lemonade as a substitute for the water and juice. If you don’t have tahini, peanut butter is a good substitute, really!

Flat Bread (Piadine)

I found this recipe in one of my books. It is simple and does not use yeast.

Ingredients

1 1/2 cups flour

1 teaspoon salt

1 tablespoon olive oil (the better the oil the better the taste)

7 tablespoons water (room temp)

Directions

Mix flour and salt in a bowl. Add water and oil. Mix with your hands until a dough is formed. Knead for about 4-5 minutes. (I do all of this in the same bowl, including the kneading.) Let the dough sit for about 15 minues with a damp towl over the bowl.  Heat a griddle over medium heat. Cut, or tear, a hunk of dough and roll it out flat, but not to flat. Put it on the griddle and flip after the bottom is cooked. That is it.

Recipes from my Mom

These were some of my favorite dishes growing up (and later, in college). My mom has been very gracious in sharing them with us all. The last two may be especially interesting to all of seeking to follow a more vegetarian diet.

Chicken Enchiladas;
these are all approximates on the amounts-
about 3-4 cups of cooked chicken or turkey, shredded
1/2 diced onion
4 cans diced green chillies
about 1 cup sourcream (enough to moisten all the meat).
salt, garlic powder, and any other spice to taste (cayenne).
microwave a package of flour tortillas to soften them.
Roll the mixture into tortillas and place in a baking dish

Homemade Tortillas

I had the great opportunity of helping the Stones make these last weekend. Thanks Stones for giving me this recipe!

Ingredients:

2 cups flour (all-purpose)
1 teaspoon salt
3/4 teaspoon baking powder (Aluminum free if possible)
3 tablespoons lard (or shortening)
2/3 cup warm water

Directions:

-mix dry ingredients
-rub in the fat (we usually use our hands)
-stir in the water (with wooden spoon)
-lightly knead until you have a soft dough
-cover with plastic and let rest 15 minutes
-divide into balls, roll out and cook

Super Simple Burritos

Antonia makes these in, like, ten minutes. They are really simple and taste great. Vegetarian too!

Ingredients:
1 can of pinto beans
Chili pepper to taste
Cumin to taste
Tortillas
Cheddar cheese

1) Warm up beans, chili pepper, and cumin in a pot
2) Warm tortillas on burner (directly)
3) Place beans and cheese in tortilla. Wrap into burrito
4) Cook burritos in frying pan until crispy

Eat with Tabasco, salsa, or cayenne pepper.

Mmmmmmm…….
